Torrone Morbido

Whisk the egg whites into the sugar mixture and continue cooking, whisking constantly, over low heat for 40 minutes.

Once the nougat mixture is set, stir in the vanilla and toasted nuts. The mixture will be very thick and hard to stir.

Press the Torrone into a pan with a sheet of wafer paper on the bottom. Add on a top layer of wafer paper and let sit.

Once the Torrone has cooled, remove it from the pan and cut into small squares. Store in an airtight container.
