Make authentic Italian Sugo di Pomodoro sauce with just a few ingredients

Sugo is the Italian word for "sauce" and is a tomato-based sauce recipe used for topping pasta. Do not confuse Sugo with this marinara sauce!

All you need is onion, garlic, olive oil, San Marzano tomatoes, and basil. Optional ingredients are red wine and sugar.

Start by cooking the onions in olive oil. Add the garlic cloves and cook for 2-3 minutes then remove the cloves and discard.

Add a can of San Marzano tomatoes, and wine if using, and bring to a low simmer. Cover and cook for 20 minutes.

Cut the tomatoes in half and add in sugar, if using. Continue cooking low and slow for 30-40 minutes.

Once the liquid has reduced, shut off the heat and use an immersion blender to blend up the sauce.

Add in a handful of torn basil leaves to the sauce. Stir until the leaves are wilted and taste for salt.
