Risotto Milanese

Authentic Italian Risotto made with Arborio rice and Saffron threads.

Risotto alla Milanese is a classic Italian recipe made with saffron and Arborio rice. This creamy and comforting risotto makes a great main course or side dish.

You'll need arborio rice, onions, butter, broth, saffron threads, white wine, parmesan cheese, and salt and pepper.

Start by crushing the saffron threads into the white wine. Let it steep for 10-15 minutes.

In a large dutch oven, cook the diced onions in butter. Then, add in the rice and toast slightly.

Add in the wine and cook until absorbed. Slowly add in hot broth and cook, stirring constantly.

Once the Risotto Milanese is cooked al dente, add in parmesan cheese and more butter.

Garnish with chopped parsley and more grated parmesan cheese. Serve immediately.
