Raspberry Ricotta Cake

All you need is flour, sugar, salt, vanilla, butter, whole milk ricotta cheese, eggs, baking soda, and fresh raspberries.

Start by creaming together the butter and sugar. Then, add in the drained ricotta and mix for 4-5 minutes, until light and fluffy.

Add in the eggs, vanilla, baking powder and salt and mix well. Then, add in the flour and mix until just combined.

Fold in about three quarters of the raspberries being careful not to break them up.

Pour the batter into a greased springform pan and top with remaining raspberries.

Bake for about 70-75 minutes. Let cool completely before dusting the top with powdered sugar.
