Pignoli Cookies

Authentic Italian Pignoli Cookie Recipe made with pine nuts and almond paste.

Just a few ingredients!  almond paste, pine nuts, egg whites, salt, powdered & granulated sugars

Start by breaking up the almond paste and placing in food processor. Pulse until fine crumbs form.

Then, add in the granulated sugar, powdered sugar, and salt. Pulse until well combined.

Add in two large egg whites. Continue to pulse until a dough forms. The mixture will be sticky.

Roll the dough into balls and press on pine nuts. Place on a lined baking sheet and bake for 20-25 minutes.

Let the cookies cool completely on the baking sheet before moving them. Dust with powdered sugar.
