Authentic Italian Eggplant Pasta made with simple ingredients!

Pasta alla Norma is the classic Italian eggplant pasta recipe made with fried eggplant and rigatoni pasta. Traditional Sicilian recipe full of fresh flavor.

All you need is eggplant, canned tomatoes, olive oil, kosher salt, basil, Italian seasoning, red pepper flakes and pasta.

Start by cubing the eggplant and tossing with kosher salt. Let sit for at least 30 minutes.

Rinse the salt off the eggplant and pat dry. Fry eggplant in a little bit of olive oil in a large skillet or dutch oven.

Remove the eggplant. Add in garlic, red pepper flakes, and canned crushed tomatoes. Simmer for 10 minutes.

Add in the cooked eggplant and stir to combine. Taste for seasoning and toss with cooked pasta.

Top the Pasta alla Norma with ricotta salata, pecorino romano, or parmesan cheese.
