Manicotti Crepes

Authentic Italian Manicotti (Crespelle) made with tender homemade crepes and a cheesy ricotta filling.

Manicotti Crepes are made with homemade crepes that are filled with a delicious ricotta cheese mixture and baked to perfection.

All you need is flour, milk, butter, eggs, salt, ricotta, mozzarella, parmesan, Italian seasoning, and marinara sauce.

To make the crepes, start by blending together the flour, milk, eggs, melted butter and salt until you get a smooth batter.

Cook 1/4 cup of the batter in nonstick skillet over medium heat. Flip and repeat with all of the remaining batter.

Set aside the Italian crepes "crespelle" to cool slightly while you prepare the filling.

For the filling, combine ricotta cheese, salt, mozzarella, parmesan, and Italian seasoning.

Assemble the manicotti by coating the bottom of the pan with marinara. Then roll up crepes with ricotta filling inside.

You should be able to squeeze 10-12 crepes in the baking dish.  Any leftover crepes can be refrigerated for later.

Top with remaining marinara sauce and a sprinkle of mozzarella. Bake for 40 minutes.
