Lemon Ricotta Muffins

Start by whisking together flour, baking soda, baking powder, and salt; set aside.

In a separate bowl, beat together the butter, sugar and ricotta. Add in remaining ingredients.

Note that the muffins won't change color much. Let cool on rack before adding glaze.
