Italian Roasted Vegetables

Oven roasted veggies that are easy to make!

This recipe for Italian Roasted Vegetables is a delicious blend of oven roasted veggies topped with olive oil and Italian spices.

All you need is bell peppers, red onion, zucchini, yellow squash, mushrooms, garlic, olive oil and seasonings.

Start by cutting the veggies into large chunks. Dice the garlic in to a smaller mince.

Place all of the veggies in a very large bowl and toss with olive, Italian herbs, kosher salt and black pepper.

Spread the veggies on a lined baking sheet. Use two baking sheets so you don't crowd the vegetables.

Roast the veggies, rotating halfway through, until they are soft and caramelized.

Serve warm or room temperature. Garnish with fresh chopped Italian parsley leaves.
