Italian Rice Pie

Classic Italian Easter Rice Pie made with arborio rice and ricotta!

Italian Rice Pie is, known as Pastiera di Riso, is a traditional Italian Easter dessert. This creamy and delicious treat is perfect for your holiday table!

You'll need milk, arborio rice, vanilla, salt, baking powder, butter, sugar, flour, eggs, cinnamon, ricotta, and citrus zest.

Start by making a simple pasta frolla dough by combining the flour, baking powder, salt, sugar, eggs, and butter.

Let the dough chill. Then  roll it out and press into a 9-inch springform pan.

For the filling, start by cooking the arborio rice in milk. Set aside to cool.

In a large bowl, cream together the butter, sugar, cinnamon, and orange and lemon zests.

Mix in the eggs and ricotta. Stir in the cooled rice mixture and stir until well combined.

Pour filling into prepared crust. Bake for 70-90 minutes until the filling is set then let cool.

Dust the top of the cooled Italian Rice Pie with powdered sugar. Cut into slices and serve.
