Italian Pear Cake

In another bowl, whisk together eggs, sugar, olive oil and vanilla until light and fluffy. Stir in dry ingredients and fold in the pears.

Pour the cake batter into a greased springform pan. Top with more sugar and bake for 45 minutes.
