Farro Salad

Italian Farro Salad with veggies, feta cheese & tangy vinaigrette!

Just a few ingredients for this salad! All you need are farro, feta, garbanzo beans, kalamata olives, celery, cherry tomatoes, and parsley.

To make the vinaigrette dressing, whisk together olive oil, red wine vinegar, minced garlic, dried oregano & kosher salt.

Add the cooked and cooled farro to a large bowl and top with tomatoes, beans, celery, olives, and parsley.

Pour on the dressing. If making for later, save about half of the dressing and toss with it before serving.
