Eggplant Parmesan Sandwich

Just a few ingredients: eggplant, bread loaf, flour, eggs, Italian breadcrumbs, parmesan, marinara, and mozzarella.

Start by slicing the eggplant into one inch slices. Sprinkle kosher salt on both sides of the eggplant and let sit.

Dry off the excess moisture on the eggplant. Set out bowls of flour, beaten egg, and breadcrumbs.

Dip the eggplant in the flour, then egg, then breadcrumb mixture. Place on serving tray while oil heats up.

Fry the eggplant in a shallow pan with canola oil. Cook about 2 minutes per side.

Cut the Italian loaf in half and spread each side with marinara sauce. Place on the cooked eggplant.

Sprinkle the eggplant with parmesan and top with fresh sliced mozzarella cheese.

Place the sandwich under the broiler just until cheese is melted and bubbly, about a minute total.
