Just a few ingredients including ricotta cheese, butter, flour, and mini chocolate chips!

Start by mixing together the butter, ricotta, and sugar until light and fluffy. Mix in the egg and vanilla, then add in the dry ingredients.

Fold in the mini chocolate chips into the batter. You can also substitute regular sized chocolate chips here.

Chill the dough for at least two hours. Roll the dough into balls and bake for about 12 minutes.

Note that the color won't change much. Bake until the cookie begins to flatten and the bottom browns. Cool on rack.
