Chicken Risotto

Chicken Risotto is a delicious one-pot meal that’s super flavorful and easy to make!

Start by finely chopping the celery, carrots, onion, and garlic in a food processor.

Add to a large pot or dutch oven with olive oil and cook down until the veggies thicken.

Add in the cubed chicken thighs and cook until they start to brown.

Pour in white wine and bring the mixture to a simmer and let the wine cook down.

Add in hot chicken broth and arborio rice. Bring to a simmer and cover, stirring every 5 minutes.

Stir in butter, parmesan and chopped parsley. Let sit for 5 minutes to thicken.
