Blueberry  Ricotta Cake

Blueberry Ricotta Cake is a delicious light and lemony Italian cake recipe that’s made with ricotta cheese and fresh blueberries.

Ingredients:  flour, sugar, butter, ricotta cheese, eggs, vanilla, salt, baking soda, and blueberries

Start by using a hand mixer to mix together the butter, sugar, and ricotta cheese for 5 minutes! (This will give you a fluffy cake)

Mix in the eggs, vanilla, lemon juice and zest. Then add in the baking soda, salt, and flour.

Use a rubber spatula to fold in the fresh blueberries into the cake batter.

Pour the batter into a greased springform pan. Top with more blueberries. Bake for about an hour.

Once the cake has cooled, dust the top with powdered sugar and top with more blueberries.
